Fried Eggs with Yoghurt and Za’atar

Step 1.

Lightly toast your bread, and then spread with a generous amount of the Greek yoghurt.

Step 2.

Meanwhile, warm 100ml of olive oil in a non-stick pan and fry the eggs. Season with salt and once they are almost cooked, add the za’atar and chilli to the oil.

Step 3.

Spoon the fragrant oil over the eggs to cook the top, then pop them onto the toast and add another drizzle of the oil.

Step 4.

Finely chop some mint and sprinkle over the top.

Mint is nice and fresh but parsley would also work well.

500g Thick Greek Yoghurt
8 Eggs
4 Tbsp Za’atar
2 Tsp Chilli Flakes
Handful of Mint
Olive Oil
