Meanwhile, place a non-stick frying pan over a medium heat with a drizzle of olive oil. Once hot, crumble in the feta, cook until it starts sizzling, almost melting 2-3 mins, then crack in the eggs and fry to your doneness. Season with salt and pepper.

Divide the hot rice between bowls, top each with a feta-fried egg, and scatter with dill fronds.
