    This was lovely. I made it dairy free with a cashew based pasmasan alternative and added prawns. I found the mint a little overpowering, would probably use less next time. We had left over sauce, I could imagine it being tasty cold, like a pasta salad too! I popped some of the leftover sauce in the freezer... not sure how well it will keep!?

    Hey Emily! Glad to hear you enjoyed this one! This sauce will keep amazingly in the freezer, for up to 3 months in fact. And you're totally right it's also a perfect on the go pasta salad option so leftovers can always be eaten the next day :)
