This was a winner! I fried the lentils with onions, chillies & curry spices for a bit of extra kick. Also had no curry leaves, so subbed in a bit of fresh coriander. Definitely one to do again as it also freezes really well too, so great for meal prep!

I really wasn’t sure this recipe was going to be a hit for my carnivore family but it really was. I added onion ginger and red pepper to the lentils as they needed using and it was fabulous. Going to serve it with some chapati on the side next time.

for a normal form I added an extra 400g of coconut milk! also added cheese on the top and onions ans carrots in the form ❤️

just a heads up, the recipe video includes peanut butter which makes this even better! add with the coconut milk, curry and chilli powder :)

Delicious.  I made a few changes. Instead of curry powder I added 2tbsp of yellow curry paste to the coconut milk.  I added a thinly sliced onion and red pepper to the lentils plus a smashed lemongrass stalk.  I used crispy chilli on top.  Really easy and tasty recipe and would definitely make again.

Think the nutrition info is wrong. There's no way this has 120g fat and 80g fat per 4 portions when it only has one tin of coconut milk

None of your recipes have disappointed me so far, and this one is no exception. I was a bit skeptical because I’m actually not a huge fan of curry and I also haven’t really been using lentils in my cooking so often – I often find them boring. But WOW. This one is amazing! The curry and coconut milk are delicious together with the lentils, and the sweetness of the sweet potatoes paired with that AMAZING crispy oil is the cherry on top. Seriously, the oil is a gamechanger. Yum!! This won’t be the last time I make this – you really have a way with flavors. Thank you!!

Really good recipe, taste is great and definitely flavorful. The only thing is l didn't manage to crisper the top as there was too much sauce.

God knows how you found this 'bland and unjoyous'... I made this yesterday and it's one of my new favourite recipes from mob. Outside of sweet potatoes this is entirely cupboard staples, you can even swap the topping for some chili crisp. 
This recipe is so easy and tasty, if you like curry you'll like this!

Hi Sarah, yes it would! We recommend freezing it after assembling and before baking. Either defrost it fully and cook as described or cook from frozen and give it an extra 5-10 mins in the oven, following the visual instructions in the recipe (to watch for when the potatoes have softened). Enjoy!

This was absolutely delicious. So easy! (Especially if you have a mandolin for those 'taters. I read a comment below about peanut butter so I'm going to try that next time. It wasn't mentioned in this recipe but it's an excuse to make it again!
