Croque Madame Croissants
Bake your Pret All-Butter Croissants according to packet instructions.
Grate your gruyère. Finely chop your chives.
Heat your butter in a small pan over a medium heat. Once bubbling and going slightly golden, add your flour and cook out for 2 mins.
Gradually pour in your milk, beating all the while until you have a smooth sauce. Bring to a boil, then simmer for 2 mins until thickened. Add about a quarter of the Gruyère, your Dijon mustard and a small pinch of nutmeg. Season to taste with salt and pepper.
Cut your croissants in half lengthways. Spread each side with a dollop of your béchamel. On the bottom piece, add two slices of ham and a good sprinkle of your Gruyère.
Place your croissants under the grill for 3 mins until the surfaces are lovely and bubbly.
While your croissants are under the grill, get a frying pan on over a medium-high heat. Add a small glug of olive oil and, once hot, crack in some eggs. Season the surface with salt and pepper, then fry for a few mins until the whites are set. Spoon some of the hot olive oil over the surface of the egg to speed this up.
Once your croissants are golden and oozing, remove from under the grill. Pop your egg on top of the base, then sprinkle with chives. Top with the lid of your croissant, then serve.
