Really tasty and easy to make, even without an air fryer- I just gently fried the feta in a little oil. Also I had no figs so threw in a handful of grapes for a sweet hit- worked well !

The quinoa mix is lovely, I'd add any leaf during cooking for some depth next time. I also consider some other herbs on the mix. Maybe parsley and/cilantro with it. I did chicken instead of feta and it worked well with a bit of a tahini dressing on top and some sesame seeds. Recommend serving with some salad leaves for some freshness, helped lift the dish loads.
