Only realised as I was making this that this is a typical gym-bro meal (protein protein protein!). It was fine but really had to up the spices/flavours.

while I was putting this together I was thinking I am not going to like it, seems too dry BUT bare with it. I loved it, use whatever chicken you like, I put mini tenders in the air fryer seasoned with paprika S&P then added to the plate instead of faffing with the bones, I made it using a pepper and green beans instead of courgette cause that’s what I had. be generous with the spices, season well oh and blend your tzatziki, works better for us.

Leave the bone in and cook 10/15mins in pan on skin, then 10/15mins in oven at 180c, has more flavour. Add more spices and garlic to rice and veg, I also added some harissa and fresh tomatoes. Just how I did it!

Needs more flavour in the veg/rice mix. up the garlic and spices and maybe add some fresh tomatoes. Tzatziki really makes this dish

I was able to find skin on boneless chicken thighs which made it this dish super quick and easy to make. But skin on and boneless can be hard to find especially in supermarkets

Loved it, easy enough to make. Took me longer than 15 mins but well worth it. portions are big so I saved some for lunch for the following day.

For the brown rice, is the weight listed the cooked weight or before cooking?

It’s cooked weight. I’d usually use about 60-75g uncooked rice per person. I used 250g cooked(one of those microwave packets) between 2 of us and it was plenty with leftovers for my lunch tomorrow.

Nice and quick to cook but I found it rather bland. Might be because I used skinless thighs (didn't want the excess fat!). Tsatziki added some flavour.

Hi Helen! Thanks for you're feedback. The skin really does boost the flavour here, if you want to stick with skinless you could try adding some extra of the spices on the chicken to boost the flavour :)
