I loved this! I took the pan off the heat when I added the eggs so they wouldn’t scramble and it was perfect. I reheated the leftovers the next day gently in a pan with a bit of water too. Can’t wait to have it again

Very nice and fresh summery dish. I did not have a full courgette, so added some tomato and bellpepper. I did add quite a lot pepper and Parmesan for flavour.
