Step 1.
Make the Air Fryer Smoky Chicken & Chorizo.
Step 2.
Peel the skin off the leftover chicken and place it into the air fryer at 190°C for 5-10 mins until crispy.
Step 3.
Bring a large saucepan of salted water to the boil. Add the pasta and cook for 2 mins under the packet timing for al dente.
Step 4.
Meanwhile, shred the chicken, grate the cheddar and finely slice the chives. Warm the chicken and chorizo mix in a saucepan set over a low heat. Stir through the mascarpone until it melts into a creamy sauce. Season with salt and black pepper.
Step 5.
Drain the pasta, reserving a mugful of the cooking water. Add the pasta to the sauce along with half of the grated cheddar. Stir through until piping hot and creamy, adding a splash of pasta water to loosen, if needed.
Step 6.
Divide between bowls. Top with the remaining cheddar, sliced chives and crumbled crispy chicken skin.
