Step 1.
Grate the tomatoes into a bowl on the largest grating then season generously with salt. Give it a mix then pour into a fine sieve set over the bowl to catch any juices. Leave to sit for 5 mins. Pour off any juices into a glass (drink this with some ice in… it’s so good).
Step 2.
Finely chop the parsley. then add the grated tomatoes back into the bowl with extra virgin olive oil, a squeeze of lemon, parsley, and freshly ground black pepper. Stir and taste for seasoning.
Step 3.
Serve up in a bowl and scoop with crackers, enjoy!
