I've always wondered - does anybody know what the "scum" which rises to the top of the curry/gravy actually is and why it's there, and why it's discarded instead of mixed in? It looks foamy like aquafaba and also very oily. Could it be largely coconut oil which could be repurposed in the frying pan steps instead of using new coconut oil from the pack? Thanks!
