Step 1.
Before you begin, make the Honey-Dijon Chicken & Pepper Traybake batch recipe.
Step 2.
Bring a large saucepan of salted water to the boil. Add the pasta and cook following pack instructions until al dente.
Step 3.
Meanwhile, shred the chicken using two forks and finely grate the Parmesan.
Step 4.
Set a large frying pan over a medium heat with a drizzle of olive oil. Add the tomato purée and cook, stirring, for 1–2 mins until it darkens in colour.
Step 5.
Add the shredded chicken, traybake veg, and water. Stir well, bring to the boil, then reduce the heat to low and let it simmer while the pasta cooks.
Step 6.
Once the pasta is ready, reserve 100ml of pasta water and transfer the pasta straight into the sauce using a slotted spoon. Toss together, adding splashes of the reserved pasta water if needed to loosen.
Step 7.
Taste and season with salt and black pepper. Remove from the heat and stir through half the Parmesan.
Step 8.
Divide between bowls, drizzle over the pesto, and scatter with the remaining Parmesan to serve.
