amazing recipe! we skipped the mint and chose to make the dressing into a pan sauce. after we cooked the chicken, we cooked some garlic in the same pan and deglazed it with a bit of chicken stock. then we added the rest of the dressing ingredients which made a lovely sauce

so good and easy. I’ve been using this recipe for the last few weeks and would just swap out the proteins. Also it’s hard to find coriander leaves around, at least for me, so I’ve been using culantro instead and it’s still excellent!

Loved this. I did it a second time, reduced the ammount of mint, added a bit of chopped peanuts to the dressing. It was great. Would do it again in a pinch. Also it works great with orange, or mexican lime, as I have those trees in my garden,

Didn’t anticipate how much I’d love this. Made it exactly as is and wouldn’t change a thing. Going to be a go-to from now on. Everything came together in the time it took the rice to cook. The toasted bits of rice were my favorite. Saved some undressed salad so will see how it holds for meal prep.

LOVED this recipe, but I have to confess that I ended up adding the juice of half a blood orange to make the dressing a tad bit sweeter.
