Chicken & Basil Stir Fry
Inspired by my favourite Thai dish, Pad Kra Pao, this is as good as meal prep gets. Ready in under 30 minutes and the flavour gets better the longer you leave it. Plus there’s barely any chopping (only the broccoli, but that’s easy.

the siracha makes the whole dish too sweet.

Hey Digby! Thanks for giving this one a go. Totally get you on the sriracha, it can be a little sweet for some. You could substitute for crispy chilli oil for more spice and less sweetness.

Really nice with sticky rice, I didn’t use quite as much chilli as the recipe said but will still great

Nice but incredibly salty! Will use less fish sauce and soy sauce next time.

This was great, easy to do and really tasty. I couldn’t get Thai basil so mixed coriander and sweet basil and thus worked just fine. Will definitely cook again.

OMG 🤤 This looks pretty plain and I wasn’t really looking forward to it. It was super high in protein and pretty low calorie though so gave it a whirl. Stunning! Incredibly easy and super delicious. It’s really filling too. I made it for 4 so have leftovers and I’m lay in bed thinking about them tomorrow 😂 I added some sugar snaps to mine as I fancied them. I also got a double yolker. This one’s deffo going to be a regular!
Note: when making the sauce it seems a lot of spice but trust it because it’s fine and so good.

This was delicious, but a little salty despite adding no extra salt and using low-sodium chicken stock. I think maybe I'll use 1 less tbs of oyster sauce and fish sauce to see if that helps. Otherwise it's delicious and a great meal prep lunch!

Couldn’t find chicken mince so used pork instead.
Found the Thai basil was a little too much of an aniseed flavour so would switch for normal basil next time. Easy and fairly quick mid-week dinner we all enjoyed.

Hi Jess! You defo can. I would omit the basil and add it through once you've defrosted the dish.

This was OK, a bit too saucy for me and quite salty. Did come together quickly and easily though but don't think I will make again.
