yuuummmmm!!!!! But it took a bit longer than expected. I didn’t add the capers and needed almost double for the dressing to coat everything

made this last night and my partner has twice today exclaimed at how good it was. I rubbed the sourdough with a garlic clove before toasting and added toasted pine nuts and pumpkin seeds. I also used 2 tbsp mayo & 3 tbsp Greek yogurt for protein & added Worcester sauce instead of anchovies. Adding it to our regular rotation and I reckon it would also be great in a wrap if you’re on the go.

Really enjoyed this. I usually pan fry the chicken, and was wary of baking it, but it was easier, tastier and less washing up!
The croutons were delicious and used up some bread that would otherwise have gone in the bin...
Changes: I used M&S roasted garlic mayonnaise in the dressing and a bit (lot) extra parmesan. I also only used two romaine lettuce (one pack) and it was easily enough.

Delicious dressing, I too added some Greek yogurt and as had no anchovies, added extra Parmesan which worked fine.

We make this almost weekly and it’s incredible every time - have evolved it to use 1/3 mayo and 2/3 Greek yoghurt, add avocado, add crispy onions, shave the Parmesan straight into the salad, and use garlic granules in the dressing
