Step 1.
Make the Ratatouille.
Step 2.
Heat the oven to 180°C.
Step 3.
Heat the ratatouille in a small pan or in the microwave.
Step 4.
Poke the potato with a fork all over, then rub with olive oil, salt and pepper. Pop into the oven for 1 hour until soft and fluffy in the middle and crisp on the outside.
Step 5.
When the potatoes are cooked, remove them from the oven once they're cool enough to handle. Then, cut a cross in the middle and gently smash them open. Heat the ratatouille in a small pan or the microwave, then spoon it into the middle of the potato. Grate over the cheese and pop back into the oven until melted. If you want a crispier crust on the cheese, slide it under a heated grill.
Step 6.
Finely chop the chives and scatter over the bubbling potato.
