Step 1.
1 Adult Serving = 2 Kids Servings
Boil the peas in a saucepan for 1–2 mins until tender. Drain and rinse under cold water to cool.
Roughly mash the peas with a fork or masher. You want them partly squished, but still chunky for texture.
Step 2.
Thinly slice the spring onions. Grate the cheddar.
Step 3.
Crack the eggs into a large mixing bowl. Add the flour, baking powder, mashed peas, spring onions and grated cheddar. Season with a little salt and black pepper. Stir everything together until fully combined.
Step 4.
Place a large non-stick frying pan over a medium heat with a drizzle of oil. Spoon in heaped tablespoons of the mixture, pressing them slightly to form small rounds. Fry for 2–3 mins per side until golden brown and set. Do this in batches if needed.
Step 5.
For the adults, mix the Greek yoghurt with a pinch of salt and the hot sauce to taste. Dress the rocket with a squeeze of lemon juice.
Step 6.
Serve up!
Kids Plate: Dish up the fritters warm with the plain yoghurt and your kids favourite veg, we've gone for cherry tomatoes.
Parents Plate: Serve with the rocket salad and spicy yoghurt dip and an extra wedge of lemon.
