I’ve made this twice, first time to the recipe. Second time I swapped onions for little shallots, so all the sauce went into the layers. really nice. I also made it into a “shepherd’s pie” with cheesy, chivey, marmite mash. worked really well.

This was good, however it tasted a little bitter and wasn’t sure whether this was due to the type of ale used, as it didn’t specify? What sort of ale would be best?

I used Beef oxo instead of vegetable stock, and added in a splash of red wine vinegar and an extra tbsp of tomato puree and it was delicious.

I've made this once with marmite, once with Bovril. I personally liked it better with Bovril, so if you're not fussed on it being vege, this is a good option.
