Step 1.
Heat the oven to 180°C. Tip the walnuts onto a tray and roast for 10 mins, then remove from the oven and drizzle with half of the honey. Add a pinch of salt and set aside to cool.
Step 2.
Cut the pears in half, then use a sharp knife to cut away the core. Slice half the pears. Finely chop the rest of the pears and set aside in a bowl.
Step 3.
Roll out the puff pastry sheet and cut into 6 squares. Take each square and lie a slice of prosciutto from one of the corners to the opposite corner. Top with a few slices of the pear, followed by the blue cheese. Fold the other two corners of the square over the filling to form a turnover shape. Place on a baking sheet and repeat with the rest of the puff squares. Drizzle with a little honey and bake for 15-20 mins, until golden.
Step 4.
Meanwhile, make the pear salsa. Add olive oil to the finely chopped pears, a drizzle of honey and a big pinch of salt and pepper.
Step 5.
Roughly chop the honey walnuts.
Step 6.
Serve the turnovers, topped with the pear salsa and chopped walnuts.
