Step 1.
Before you begin, make the Beef Chilli Con Carne batch recipe.
Step 2.
Fill a large saucepan with salted water and bring to the boil. Once boiling, tip in the pasta and cook following pack instructions until al dente.
Step 3.
Meanwhile, finely grate the cheddar.
Step 4.
Set a medium saucepan over a medium heat with a drizzle of olive oil. Once hot, add the gochujang and cook, stirring, for 1–2 mins until darkened. Stir through the beef chilli with a splash of water to loosen, then heat until piping hot.
Step 5.
Using a slotted spoon, transfer the cooked pasta into the sauce. Pour in the double cream and add half the cheddar. Stir until evenly coated, adding a splash of pasta water if it’s too thick. Taste and season with salt and black pepper, if needed.
Step 6.
Share between bowls and top with the remaining cheddar.
