Step 1.
Add your caster sugar to a small saucepan with 150ml water. Gently heat until your sugar has dissolved, then leave to cool to room temperature.
Step 2.
Add your basil leaves to a jug, then bash with the base of a wooden spoon to bruise the leaves and release their oils.
Step 3.
Add in the gin, 200ml of your sugar syrup, the juice of your lemons, apple juice and then fill with ice. Mix well with a long spoon so all the ingredients are combined and cold.
Step 4.
Rub the edge of your serving glasses with the lemon skins and then dip into the Maldon Flaky Sea Salt.
Step 5.
Pour your drink into your prepared glasses, then top with a leaf of basil. Enjoy responsibly.
