Anchovy Nam Prik Roasted Mushrooms
Thai food is incredible. We've taken inspiration from Nam Prik – a sour, salty, sweet, spicy condiment usually made with shrimp paste to dress these roasted mushrooms. We’ve switched it around a little and loaded it with anchovies to give it a fishy but not too fishy savoury punch.

Really nice recipe, but the method is a bit rubbish — it’s missing half the steps! There’s no mention of the fish sauce which is in the ingredients, and it says to mince the garlic with the chilli, then later to grate the garlic. Bit confusing. I served it with crispy rice, though, and that made it really interesting to eat.
