You could try chickpea water (aquafaba) but I’m not 100% if it would be enough to hold the mix together xx

Hi Maria! You could freeze the pancakes after cooking. Let them cool completely then transfer to an airtight container, layering with baking paper to prevent sticking. We'd recommend freezing for up to a month. Defrost at room temperature, then reheat in a low temp oven or a pan.

Why would you freeze a three-ingredient, 15-minute recipe? It would probably take longer to defrost them.
