    the quantity this made is INSANE. it nearly made enough for 6-8 serves which means the nutritional information is also being thrown off. tasted so delicious so would be great to get it fixed up! perhaps just half a cauliflower?

    Love it! I made it vegan by using cashew cream and nutritional yeast instead of regular cream and parm. Made this for a dinner party and everyone loved it!

    I love this recipe. I usually cook enough to serve 4 and the 2 of us eat it over two nights. I cook the leftovers in the oven with cheese layer on top to create a crust. Yummy.

    Delicious umami ragù which is a bit less involved than some similar cookbook variations. Pleased to have had my food processor to blitz through all the ingredients! The textures of the cauliflower and walnuts, combined with the chestnutty flavour of the mushrooms was superb. I had carrots so added one in with my onion and celery soffrito.

    This recipe is absolute wizardry - tastes so much like a really good bolognese. I used normal tagliatelle and a drizzle of an oak smoked olive oil and it slapped

    I've frozen the sauce a few times, works fine. I find the recipe makes way too much for the 4 of us so we tend to freeze half. Just add some more pasta water when reheating. Not sure how it's freeze with the pasta 🤔

    I just made this, I hate mushrooms but loved this. My notes: use big sheet pans and spread the mushrooms and cauliflower very thin. Cuts down roasting time by half. Don’t fully cook your pasta, I cooked my parpadelle for 4 mins and then added to the ragu, undercooked with pasta water. Simmer on the lowest heat for 5 to 8 mins. Soaks up all the flavours. I also added half a teaspoon of agave syrup to complement the walnuts. A squeeze of lemon at the end and handful of parsley. If you don’t have miso substitute with a stock cube.

    We love this recipe so much. I too have tried recipes with combinations of mushrooms, nuts, lentils etc but they have never hit the right spot. Who knew the addition of cauliflower would make it so tasty and compliment the textures of the other ingredients. My husband can be difficult to please when trying meatless meals but this got a thumbs up from him. I will definitely be making this again.

    We absolutely loved this dish. The texture and flavours were wonderful. I only had tagliatelle pasta but it was thick enough to be coated by the sauce. It got a 10/10 score from the family and we will definitely be making it again.

    I cooked this for my family, all bowls were empty even the 5 year olds. I didn’t have cream so used natural yoghurt, I didn’t add Parmesan as my daughter is funny with cheese. I served it with Rigatoni. A great recipe I’d cook again.

    A little on the plain side for us, but still nice, the kids wolfed it down. We thought it was missing a little hit of acid and gave the final pot a squeeze of lemon juice and that really seemed to bring it to life.
