20g Cornflour
60g Crispy Chilli Oil
2 Garlic Bulbs
40g Ginger
10g Ground Sichuan Peppercorns
110g Peanuts
2 Red Chillies
120g Rice Wine Vinegar
50g Savoy Cabbage
40g Whole Sichuan Peppercorns
400g Soba Noodles
330g Soy Sauce
1 Spring Onion
180g Sugar
200g Tahini
150g Toasted Sesame Oil
5g Toasted Sesame Seeds
10ml Vegetable Oil

The Recipes

When it comes to the food of the world, Sichuan cuisine stands out as one of the most vibrant and exhilarating for the taste buds. Known for its bold use of spices, complex flavours, and fiery kick that leaves a memorable tingle, Dentist chair-like on the tongue, Sichuan dishes are undeniable. We're not experts by any means but this meal plan is inspired by the flavours we love from that region.

First out the gates is Smashed Sichuan Chicken. This dish has got a great combination of tender chicken with a whirling dervish of Sichuan peppercorns, chillies, and other fragrant spices. You'll fall in love with this dish from the first bite. This recipe promises not just a meal, but an experience.

Next on our itinerary is Zena's Sichuan Aubergine. This recipe was created by recipe genius, Zena Kamgaing. The unassuming aubergine is the star in this dish, absorbing the bold flavours of its rich and aromatic sauce. It's sweet, savoury, and spicy – a recipe which pays homage to the Sichuan tradition of balance in taste.

To round off our attempt to ape Sichuan cuisine, we've got some Sizzling Sichuan Noodles. As the name suggests, this dish is pretty hot, throwing together chewy soba noodles with a killer, lip-tingling sauce. The magic lies in the sauce – a concoction of soy, vinegar, and the unmistakable tang of ginger. Topped with crushed peanuts for a dash of texture. Easy.

Smashed Szechuan Chicken Recipe

This is my take on Sichuan's famous bang bang chicken, a deliciously spicy dish that delivers a real punch. The szechuan chicken is tender and juicy, coated in a flavourful, fiery sauce made with classic Szechuan peppercorns for that iconic numbing heat. The dish is balanced with a rich combination of garlic, soy sauce, and chili oil, offering layers of flavor with every bite. Serve it warm with a bowl of steamed rice to absorb the mouth-numbing chicken juices, and you’ve got a simple, but bold meal. Perfect for those craving a taste of authentic Chinese cuisine.
