    Ive been making this dish a few times now since it is so delicious and everyone loves it. I actually didn’t have tomatoes and did everything the same but with grilled peppers instead and swapped the almonds for cashews to make it extra creamy. Absolutely love it!

    the sauce is really tasty 😋 did the meatballs with turkey mince and added some couscous, instead of the butter beans. I think it would also go well with gnocchi

    My first MOB recipe & very impressed. The flavours and textures worked so well. I used cannellini beans (prefer them to butter beans) and they caught a bit of toastiness in the oven for a lovely bit of crunch and contrast. Loved the romesco sauce; generous amount, too.

    Did your pork sausages brown all over like that from the oven? They look pan fried - mine are struggling! Also, are the almonds natural or roasted? I’ve used natural and they stay a little crunchy in the romesco sauce.

    The recipe steps differ to the video. In the video, he removes the sausages, mixes in the beans & then puts the sausages back on the top. I turned the paler sides upwards at that point & they browned all over.

    This was amazing. I would double up the leeks and tomatoes and half the butterbeans next time but apart from that it was delicious, filling and super easy. One to repeat!

    This is a favorite - quick, easy, and flavorful! I tend to use more leek and tomato than the recipe calls for since they cook down quite a bit. Since I’m trying to watch my cholesterol and sodium, I get chicken Italian sausage (from Trader Joe’s in the US) and use half a pound of that mixed with half a pound ground turkey + some breadcrumbs, an egg, and fennel seeds (+ other spices to taste if I feel like it) to make the meatballs. All the flavor is still there, and I feel it’s a bit better for me nutrition wise!

    Is there a good substitute for the almonds here? I have a nut allergy but this sounds great, unsure if it'll be as nice if I simply remove them

    You could blitz up the butter beans in place of the almonds and make a hummus style romesco

    This was BOMB. It felt like a restaurant quality dish yet it was so simple to make. The only part missing in the recipe, but that I saw in the video, was to squeeze the roasted garlic into the romesco sauce. This is definitely entering my roster for delicious and easy weeknight meals.
