In case you haven't been keeping up with our recipe development over the last couple of years: gnocchi is a type of Italian pasta that's typically made with potatoes, flour, and sometimes eggs. And we're obsessed with it. Unlike most traditional pastas, the dough is rolled into small dumplings, which are then cooked and often served with various sauces or toppings.
You might be wondering how many different ways there could possibly be to cook and eat gnocchi, and we're hear to tell (and show) you that there's plenty. We've packed this meal plan with three recipes which use gnocchi in three different ways.
The first recipe we're shouting about is our Cheesy Leek Soup With Crispy Gnocchi. We're almost using gnocchi like croutons in this dish, letting them provide a nice bit of texture and chew to the rich and creamy broth. This is definitely a winter warmer but feel free to swap out the cheesy soup for something a bit more light and bright once summer and spring roll around.
Next up, Crispy Lamb Gnocchi. Lamb mince doesn't really get the love it deserves so we've put it front and centre in this quick and simple weeknight dinner. The ras el hanout, mint, and pomegranate molasses give this a real Middle Eastern vibe. The fact you only need six ingredients to make it? Well, that's just the cherry on top.
To finish off your week of heavy gnocchi consumption, we'd recommend having a crack at Baked Double Cheese Gnocchi. If there was ever a recipe that you could consider to be the opposite of a salad, this is it. It's rich, warming, and loaded with two different types of cheese.
