Absolutely beautiful for a quick midweek dinner. The kids loved it too! All the flavours complemented each other perfectly. I did both chicken and fish (as half the family don’t like fish), and it was delicious!

What mixed grains do you use for this recipe?

Hi Sara! We used those microwaveable mixed grain pouches you can buy from the supermarket for this recipe, however, you can use whichever you'd like if you'd prefer to cook from scratch. Pearl barley, quinoa, freekeh, amaranth, bulgur, millet, rice – all of those will work well! The only thing to be wary of is that you'll need 500g cooked weight rather than 500g uncooked weight if you are cooking your grains.
