The Eggy One

We're making the most of the gorgeous in-season asparagus right now along with plenty of other delicious vegetables. Grab your ingredients and get ready for an extremely good week of eating with Crispy Rice with Curry Fried Eggs, a Zippy Rice Salad with Jammy Eggs, and spicy Curried Chicken Burgers with Romesco Sauce.

Makes 3 dinners, each serving 4

Curried chicken burgers put in a shift here with a quick homemade romesco served alongside a fresh fennel slaw. On top of that, we've got a vibrant rice salad with a beautiful green avocado and coriander dressing with jammy eggs and crunchy almonds. And, to finish, a Persian tahdig-inspired crispy rice dish that we’ve topped with salsa, more asparagus, and the star of the show: a curried fried egg.

3 Fennel Bulbs
8 Skinless, Boneless Chicken Thighs
3 Avocados
1.25kg Asparagus
4 Ciabatta Buns
2 Red Chillies
4 Garlic Cloves
10 Eggs
4 Tsp Curry Powder
1 ½ Tsp Ground Turmeric
150g Smoked Almonds or Sunflower Seeds
3 Limes
4 x 250g Steamed Basmati Rice Pouch
450g Greek Yoghurt
1 Large Bunch Of Coriander
465g Jar of Roasted Red Peppers
