Greek Gnocchi Traybake
All the flavours of Greek salad in a warm comforting meal. This one is really low lift and the oven does most of the work. Make a big batch and reheat any leftovers in the microwave. Too easy.

This has become a family favourite. I add courgettes to bulk out the veg a little and use halloumi instead of feta, but other than that stay faithful to the recipe. I crave this recipe now when it’s not on the menu!

Love this recipe, thank you! planning to cook this for friends but one has a lentil allergy, any suggestions for a substitution or should I just add more gnocchi?

love this recipe 😋 I have made it twice and it freezes really well. First time I didn't have aubergine so I substituted with courgette. will be a regular addition to my meal plan.

Hey Grainne! Yes make sure you let the dish cool down before popping in the freezer. It will last for up to 3 months :)

I added some agave to the harissa/oil/lemon/garlic mixture to balance the lemon a bit and it is addicting! I followed other reviewers’ advice and also roasted the onion with the other veg. We additionally used up our fall harvest and roasted zucchini (courgette), eggplant (aubergine), summer squash. I used jarred castelvetrano olives and did not used the canned lentils, as they weren’t available at the store. This was so delicious and incredible!

had this a couple of times and really enjoy it, lots of flavour and super duper easy! I also just put the onions in with everything else as opposed to pickling.

love this recipe, simple and flavourful and I often throw in any vegetables i have in the back of the fridge :) i also put the onions in the oven rather than pickled which is really nice too. never used to like gnocchi much until this recipe, love when they get a bit crispy at the end!

Loved this recipe! So easy to make - got the veggies in the oven first then made the sauce and onions. Added loads of lemon and harissa for us and was an absolute flavour bomb! Definitely making again. thanks mob!

I would do half of the gnocchi to get a better veg to potato ratio

really enjoyed this. I've also made it with orzo as I'm not a huge fan of gnocchi.

Delish. didn’t pickle the onions - chucked them in at the same time as the gnocchi and it was lovely. topped with some fresh basil at the end. Nice and filling, quick and tasty.

very delicious but agree with the comment that step 2 and 3 should be swapped as it is more time efficient to get things in the oven first then make the marinade

I was a bit sceptical but happily proven wrong. so delicious with plenty leftover for lunches. only thing is i would definitely reheat as the gnocchi goes hard and is not as lovely and chewy as when warm. Will be making again 👍

wasn’t as tasty as hoped, needed something sweet like balsamic glaze to counteract the lemon I think

Hey Stella! Thanks for giving this one a try. Adding some balsamic glaze could work for this if you'd like a bit more sweetness in the dish, or you could reduce the amount of lemon next time!

do you not boil the gnocchis first?

Sensational dish. So many flavours, the citrus makes the dish. I added a touch more Harissa. This will be a regular on our list!
