Batch Cook: Cauliflower, Chickpea & Peanut Curry

A beautiful vegetarian curry that you can turn into a range of delicious recipes. Meal prep has never looked this good.

Ingredients

Makes a six-portion batch recipe

For the base:

6 Cardamom Pods
1 Cauliflower
2 Tsp Ground Cumin
2 Onions
4 Garlic Cloves
30g Ginger
2 Tsp Ground Coriander
1 Tsp Ground Turmeric
3 x 400g Tins of Chickpeas
400ml Coconut Milk
4 Tbsp Peanut Butter
200ml Vegetable Stock
1 Lime
Olive Oil

For the Cauliflower & Chickpea Curry with Sesame Fried Eggs:

2 Eggs
2 Spring Onions
2 Tbsp Sesame Seeds
Naan, To Serve

For the Charred Cauliflower & Peanut Curry Noodles:

300ml Vegetable Stock
300g Udon Noodles
100g Beansprouts
10g Fresh Coriander
2 Tbsp Toasted Sesame Seeds
2 Tbsp Chilli Oil

For the Lime-y Roast Cauliflower, Peanut & Green Bean Curry:

200g Green Beans
250g Wholegrain Microwave Rice
1 Bird’s-Eye Chilli
10g Fresh Coriander
1 Lime
